Quorum Architects, Inc. has worked with Milwaukee Area Technical College (MATC) in the development of the Cuisine Fine Dining Lab & Dining Room Relocation project. The project consists of relocating and upgrading the existing Culinary Arts Restaurant Lab Complex. The scope of the work includes replicating the elements of the academic program and upgrading them to the current industry standards. An advisory committee made up of outside restaurant peers has been involved throughout the process to assist in developing the design and recommending modifications to reflect a real world learning environment. Students will be taught full meal service for fine dining and restaurant kitchen from proper place setting, serving etiquette, food and entrée preparation. The newly designed Cuisine Fine Dining Lab & Dining Room will also offer a unique interactive opportunity for dining guests. Glass walls located within the restaurant and along the corridor within the building allows for guests and others to view activities occurring in the kitchen and dining room. Guests are also able to view kitchen activities on a projection screen which hangs from the ceiling in the main dining area. The lab has been relocated to the first floor of the Milwaukee Campus, Main Building. This location allows for more public exposure and presence amongst the campus. The project was completed in early July 2012.
